Pineapple Jalapeno Margarita w/Grand Marnier [Quarantine Day 44]

Time is no longer a precious commodity during this quarantine period.  And so in addition to cooking and baking and doing some DIY skin and hair care, I’m also mixing cocktails to see if I can come up with some new winning combinations for my palette.  One or two of them were collosol fails. But this “modified” pineapple jalapeno margarita is better than any I’ve ever tasted. Like ever!

INGREDIENTS

  • 1/2 cup puréed pineapple [blend 4-5 morsels of canned pineapple + 1/2 cup icewater]
  • 1.5 cup tequila [Jose Cuervo Gold]
  • 1/2 cup triple sec
  • 1/2 cup Grand Marnier
  • 1/2 cup fresh lime juice (it must be fresh)
  • 1/4 cup sugar syrup*
  • 2-3 slices jalapeno
  • 1/2 tsp red chili powder + 1/2 tsp salt [for glass]
  • pineapple and jalapeno slices for garnish

  • I used puréed pineapple juice only out of necessity & not any creativity – I was out of pineapple juice, lol.
  • Homemade sugar syrup recipe: [1 cup of sugar + 1 cup of water. Heat until the sugar dissolves. Cool & store in the fridge.]
