Fiery Lettuce Wraps [Vegan][Quarantine Day 50]

I’m all about eating healthy and cooking low-calorie meals for my family. We’re also a family that enjoys extremely spicy food – for us, the hotter the dish, the better. And that’s why these fiery lettuce wraps are a big hit in our family.

They are delicious and actually keep us full because these simple-to-prepare Vegetarian Lettuce Wraps boast sautéed veggies with tofu in my hot and spicy Thai-Peanut sauce <— [click to see recipe].  There is so much flavor in these crisp wraps that we’ve begun eating these more often than ever. I used sugar snap peas, green peppers (capsicum), carrots, red & sweet onions, zucchini, water chestnuts, jalapenos, and cabbage.

First I heated some oil and sautéed all the vegetables – adding them one by one. Stirring constantly, and still on high heat, I allowed them to cook al dente, not wanting them to be fully cooked, nor wanting them to taste raw.

Next, I added my homemade Thai Sauce made with sesame paste and peanuts.

In another pan, I sautéed the tofu (crumbled) and added the Thai sauce to it as well. I forgot to take a photo so I’m sharing the photo with the tofu added to the vegetables.

That’s it. All that remained now was layering the tofu-veggie mix on the lettuce, topped with roasted peanuts.
